Chef Hernan Griccini from Amalia
The chef Hernan Griccini He is originally from Santa Fe, Argentina. His origin comes from a family of bakers who moved to Mendoza to work at the Park Hyatt hotel. He then went to the Four Seasons Hotel Argentina while giving classes in Rosario and Buenos Aires.
He was also part of GAJO (Gastronomía Argentina Joven), a group of young chefs who aspire to elevate Argentine cuisine through education. In Mexico, she worked at Villa Azur and Mandolina in CDMX. She also passed through the Dominican Republic before arriving in Miami, in 2021.

Amalia is a Mediterranean cuisine restaurant located inside the Lennox hotel in Miami Beach, which has a very personal concept influenced by the chef’s gastronomic experiences. In its menu we find a fusion of Spanish, Mediterranean and Latin American cuisine.
Something that also caught our attention was its decoration, which we found very feminine. In it, colorful lights and a very romantic atmosphere stand out. Don’t forget: the hotel offers breakfast, lunch and dinner every day.
Leynia Restaurant at the SLS Hotel & Residences Cancun
The goal of these events is to provide local guests and patrons with excellent dining experiences and also to introduce the leynia restaurant from the SLS hotel. The date was just in the restaurant leynia where we were greeted with a welcome cocktail, a pineapple mojito and five dishes from the special menu.
The concept of these menus created by the guest chefs is that of “omakase”, which means to the chef’s taste: we let him decide which dishes we try.

An omakase with Miami flavors

We started with the Brussels sprouts, yakitori and pomegranate pork rinds and the warm brie cheese with beets cooked in salt and orange emulsion. We continue with the watermelon gazpacho and watermelon pickles with burrata and crispy bread.
Then came a bass with noisette carrot puree, pico de gallo and quelites, rabbit and mushroom ravioli and asparagus risotto, fried egg and cambray potatoes. For dessert, the moist gluten-free chocolate, emulsion of citrus and berries and the Neapolitan flan with dulce de leche, by chef Constanza de Amalia.
